Protein Bagels
Dough Ingredients:
2 cups flour
1 cup plain Greek yogurt
1 full egg, 1 egg yolk
1 tbsp coconut sugar
1 tsp baking soda
1/4 tsp salt
Egg Wash Ingredients:
1 full egg
pinch of salt
1 tbsp water
Whisk together so it’s airy
Process:
1. Mix all the ingredients together
2. Dough shouldn’t be sticky or dry
3. Add flour to surface, divide into four pieces
4. Rollout and shape your bagel
5. Add egg wash all over the top & sides 6. Add toppings like sesame seeds, cheese everything but the bagel seasoning
7. Bake for 10 min in the air fryer on 350
Flourless Seed Bread
Ingredients:
1 cup almond flour
2 tbsp pumpkin seeds
2 tbsp flax seeds
2 tbsp sunflower seeds
1/2 cup oats
4 eggs
1 tbsp apple cider vinegar
1 tbsp olive oils
1 tbsp coconut oil
1 tbsp maple syrup
1/4 tsp baking soda
Pinch of Salt & pepper
Process:
Mix all the ingredients together in a bowl. Then pour into a mini loaf tray 5in x 2in and top off with chia seeds.
Bake on 350 for 32 minutes.
Slice, toast and enjoy with your favorite toppings.
Chocolate Gingerbread Protein Muffins:
Ingredients:
· 1 1/4 cup almond flour
· 1/4 cup tapioca flour
· 2 scoops Chocolate Plant Protein
· 1 1/2 teaspoons baking powder
· 1 teaspoon ginger
· 1 teaspoon cinnamon
· 1/2 teaspoon cloves
· 1/2 teaspoon nutmeg
· 1/2 teaspoon sea salt
· 2 tablespoons ground flax
· 1/3 cup warm water
· 3/4 cup unsweetened apple sauce
· 3/4 cup unsweetened almond milk
· 1 teaspoon vanilla extract
· 1 tablespoon coconut oil, melted
· Optional Flaky sea salt for topping
Instructions:
1. Preheat the oven to 425 F. Line a muffin tin with muffin liners or spray with nonstick spray.
2. In a large mixing bowl, whisk together the almond flour, tapioca flour, protein powder, baking powder, ginger, cinnamon, cloves, nutmeg and salt.
3. In a separate bowl, stir together the flax and warm water, letting sit for at least 2 minutes. Then add the applesauce, almond milk, vanilla, and coconut oil, and stir until well combined.
4. Pour the wet mixture into the dry ingredients and stir with a spoon or rubber spatula until just combined.
5. Divide the batter evenly among the 12 muffin cups.
6. Bake at 425 F for about 8 minutes and then turn the oven heat down to 350 F for about 5-7 more minutes or until a toothpick inserted in the center comes out fairly clean.
